Curry Pasta Salad

Welcome to another post! Today I wanted to share one of my favorite recipes ever - Curry Pasta Salad. I absolutely love this recipe because, it's so delicious and you can eat it with anything. It goes with lamb, chicken and pork. 

Curry Pasta Salad


Ingredients

1. 500g (5 cups) Pasta
2. 250 ml Tomato Sauce 
3. 125 ml Oil
4. 100 ml White/Brown Vinegar
5. 200 ml Sugar
6. 25 ml Curry Powder
7. 1 Green Pepper
8. 1 Onion

Method
  • Mix all sauces well
  • Cut onions and green pepper
  • Mix everything and add pasta
OK, so I have a few tips I'd like to share. First of all, you're going to need a big bowl because this is a big salad. You can use any pasta you want. I like to use the pasta ridges because I like how they break apart so it's easier to eat.


With the sugar I've noticed that if I put 200 ml sugar it's too sweet so I measure it to about 125 ml (1/2 cup). You can use any curry powder you want. I like to make it extra hot so I use two types of spices. And I measure them both 25 ml. Sometimes my brother says I mustn't make it too hot (haha).  

I cut the green peppers nice and small with a knife but with the onions I like to use a twista/chopper to make it really fine. Once you mix all of your ingredients your sauce is going to be a bit thin but honestly it doesn't really matter what consistency it is, as long as it's not too thick. When you have your pasta and sauce add small amounts of pasta and mix.



I like to do this because if I put all the pasta in at once, it gets hard to mix and all the pasta just flies out of the bowl, lol. Once you mix everything, your salad should look like this:


This curry pasta salad is so delicious and it goes with any type of meat. You can also eat this alone. What I also like about this salad is that you can add as much as you want of any ingredient, for instance, you can add as much curry spices you want, or as much pasta as you want, it all depends on how you want the flavor, texture or the amount. Remember to let it chill in the refrigerator for a few hours before eating it. I like to take it out 15 minutes before I eat so it's not so cold when I chew it. Tip ~ the longer it chills in the fridge, the more flavor comes out so, it's more delicious!
