Lemon Meringue

Today I felt like doing a recipe you can make for dessert and I decided on a Lemon Meringue. My mom and I love making this for birthdays, the weekends or for some special occasion. My dad loves this dessert; it's one of his favorites.
Lemon Meringue
Ingredients
Filling:
1. 2 tins condensed milk
2. 4 eggs (room temperature)
3. 250 ml lemon juice
4. 125 ml caster sugar
Crust:
1. 1 pack Bakers Tennis Biscuits
2. 125 g butter (melted)
Method
Crust:

Lemon Meringue
Filling:
1. 2 tins condensed milk
2. 4 eggs (room temperature)
3. 250 ml lemon juice
4. 125 ml caster sugar
Crust:
1. 1 pack Bakers Tennis Biscuits
2. 125 g butter (melted)
Method
Crust:
- Preheat oven to 180 C and grease oven proof bowl.
- Crush biscuits and melt butter. Mix butter with biscuits till crumbly texture.
- Take mixture and press on bottom and sides of bowl ~ as thin or thick as you want it.
- Separate eggs, then mix condensed milk and egg yolks and add lemon juice.
- Pour mixture into bowl, on top of crust.
- Bake for 10 minutes.
- Beat egg whites till soft and fluffy. Add sugar slowly and keep beating till light and fluffy.
- Take egg whites and spread on top of filling very carefully.
- Put back in oven and bake till golden brown.
OK, so my mom and I did make some adjustments to the recipe to make it the way we like it. But I'm not going to share those adjustments because they are our secret to making an even better version than the original recipe.
The thing that I like about this Lemon Meringue is that you can eat it hot or cold. If you want to eat it cold, just chill it in the fridge for a few hours. We like to eat it when it's cold. It's also so easy and quick to make + it tastes delicious.
