Birthday Bash!
Hey!
This week I wanted to do something related to my birthday, and this year we had a Birthday Bash for me, my mom and their anniversary. Fun fact ~ my mom and dad got married on my mom's birthday. And this year was their 20th wedding anniversary, so we decided to have a Birthday Bash that celebrates their anniversary, my mom's birthday and my birthday since her birthday is 10 June and mine is 12 June.
OK, now let me tell you what this blog post is about. In this post I want to share the recipes we made with y'all. For my mom's b-day/anniversary we made a Cremora Tart and for my b-day we made chocolate and vanilla cupcakes. For food we made samosas, mini sausage rolls, Chip-nix with dip and some salty crackers. Let's begin ~
Cremora Tart
Ingredients
1. 1 - 2 packets tennis biscuits
2. 60 ml butter
3. 500 ml cremora powder (1 packet)
4. 60 ml ice water
5. 1 container (230g) cream cheese
6. 1 tin can (385g) condensed milk
7. 125 ml lemon juice
8. 5 ml gelatin

Vanilla Cupcakes
Ingredients
1. 125g butter
2. 3/4 cup sugar
3. 5 ml vanilla extract
4. 2 large eggs
5. 200 ml milk
6. 2 cups flour
7. 3 tsp baking powder
8. 1 tsp salt
Method
I had lots of fun making these recipes. They were so easy to make and they are delicious. My mom and I have tried lots of vanilla cupcake recipes in the past and they were...well, a flop. But this one was perfect!

Ingredients
1. 1 - 2 packets tennis biscuits
2. 60 ml butter
3. 500 ml cremora powder (1 packet)
4. 60 ml ice water
5. 1 container (230g) cream cheese
6. 1 tin can (385g) condensed milk
7. 125 ml lemon juice
8. 5 ml gelatin
Method
- Grease a round cake pan (make sure it's a springform pan) and set aside.
- Take the 1 - 2 packets of tennis biscuits and crush them till they form little crumbs, then melt butter and mix the crushed biscuits.
- Take the butter and biscuit mixture and throw into cake pan. Press the biscuits on the bottom and sides of pan, then put in fridge to chill for 30 minutes.
- Mix the Cremora powder and ice water well in a mixing bowl. Add cream cheese, condensed milk and lemon juice and mix.
- Make the gelatin mixture (mix 5 ml gelatin with small amount of hot water), add it to the Cremora mixture and mix well.
- Pour the mixture onto crust in the pan and put in fridge to chill for 2 - 3 hours.
- When tart is finished chilling, take sides off and top with any fruit you like and enjoy!

Vanilla Cupcakes
1. 125g butter
2. 3/4 cup sugar
3. 5 ml vanilla extract
4. 2 large eggs
5. 200 ml milk
6. 2 cups flour
7. 3 tsp baking powder
8. 1 tsp salt
Method
- Preheat oven to 200°C and grease big muffin pan.
- Beat butter and sugar till light and fluffy.
- Add eggs one at a time, beating after each addition. Add vanilla extract and mix well.
- Sif flour, baking powder and salt. Fold in flour mixture, alternating with milk.
- Spoon cupcake batter into cupcake trays. Bake cupcakes 12 - 15 minutes until golden brown.
- Leave cupcakes to cool, then decorate!
For the chocolate cupcakes we used a coffee cake batter and baked them for about 20 minutes or until the toothpick came out dry. If you want the recipe for those chocolate cupcakes, here you go ~ Delicious Coffee Chocolate Cake Recipe
