Lemon Loaf

Welcome to another post. Today I wanted to do a recipe and since I did a few healthy recipes 2 weeks ago, I thought it's time for something sweet, or should I say sour?
I was thinking I could share a delicious Lemon Loaf recipe with y'all. This recipe is actually a version of Starbucks's Lemon Loaf and you'll have all of the ingredients to make this in your house and that's why I love it so much - and it tastes delicious!

Lemon Loaf
If your icing is runny, don't worry, that's how it should be so you can pour it over the loaf. Your icing should have a glossy look to it and make sure to let it set before slicing the cake. We like to eat it warm too even though the icing hasn't set yet (in my opinion ~ I like it better when it's warm).

Lemon Loaf
ingredients
cake
1. 1 1/2 cups flour
2. 1/2 tsp baking soda
3. 1/2 tsp baking powder
4. 1/2 tsp salt
5. 3 eggs
6. 1 cup sugar
7. 2 tbsp butter (softened)
8. 1 tsp vanilla extract
9. 1 tsp lemon extract
10. 1/3 cup lemon juice
11. 1/2 cup oil
icing
1. 1 cup + 1 tbsp powdered sugar
2. 2 tbsp milk
3. 1/2 tsp lemon extract
method (cake)
- Preheat oven to 180°C and grease a loaf pan.
- Mix flour, baking soda, baking powder and salt in a bowl.
- Mix (using a mixer) eggs, sugar, butter, vanilla extract, lemon extract and lemon juice together in another bowl.
- Add wet ingredients to dry ingredients and mix until smooth. Add oil and mix well.
- Pour batter into greased loaf pan.
- Bake for 45 minutes or until toothpick comes out dry.
method (icing)
- Mix powdered sugar, milk and lemon extract in a bowl with a mixer on low speed.
- Once loaf is finished, let it cool completely on cooling rack.
- When cooled down, pour icing over lemon loaf. Let icing sit before slice and enjoy!

I absolutely love this recipe because it's sooo delicious and it's quick and easy to make. You can also make the loaf without the icing and it will taste just as amazing!
