Easy Koeksisters!

It's time for another recipe and I've decided to share a delicious and easy koeksister recipe with y'all! Koeksisters are a tasty, traditional dessert in South Africa and some people might think it's hard to make, but today I'm going to share a very easy and super delicious recipe with you guys!
Easy and Delicious Koeksisters!
ingredients

- 2 1/2 cups sugar
- 1 cup water
- 12,5 ml lemon juice
- 5 ml vanilla extract
dough
- 1 and 1/2 cup flour
- 22 ml baking powder
- pinch of salt
- 25 ml butter/margarine
- 150 ml milk
- 750 ml oil (for baking)
method
- Warm sugar and water in a deep pot, over low heat without a lid, til boiling point ~ stir it slowly until sugar melts. Boil the sauce for 7 - 8 minutes slowly ~ don't let it boil too fast, otherwise sauce will be thick. Take pot off stove, when done, and add lemon juice + vanilla extract. Set aside to cool.
- Sif the flour, baking powder and salt. Crumble the butter in with your fingers. Mix in milk til you have a dough ~ work light!
- Roll the dough, on a floured surface, about 5 mm thick. Cut narrow strips and braid the koeksisters. You may cut them to any size you would like. You can cut thick strips, then divide into a few squares and cut 2 lines from those squares to have three little strips, then braid your koeksisters.
- Heat oil til fairly warm. Bake 2 - 3 koeksisters (depending on size) at a time. When koeksisters are done, immediately dip them in cooled off sauce. You may put sauce in an ice bath to make it even cooler ~ the cooler the sauce, the better. Dip koeksisters in for a few seconds so the sauce can soak in to the middle of the koeksister. Take them out of the sauce and put on a cooling rack, with an oven pan underneath for any excess sauce to drip off. Chill koeksisters in fridge for a few hours or overnight, and enjoy!
I have a few things to share with y'all that worked for me! So first of all, the sauce is very important ~ it's consistency has to be perfect. You have to keep stirring as the sugar melts, then when it starts making small bubbles, stop stirring and let boil for 7 - 8 minutes. Make sure, when the sauce is done, that it cools off properly; this is where an ice bath works perfectly. Also, you may transfer the sauce into a smaller bowl, like, a measuring jug to make it easier for the koeksister to dip in.
Next, the dough. I hope I explained it right on how to cut it. You can choose what size you want to make your koeksisters; always start with cutting strips. And make sure, you press the edges of the braids tightly together otherwise, it might break open when you bake them. It's also very important to dip them in the sauce immediately after you take them out of the oil, otherwise the sauce won't soak into the koeksister.
You can eat these koeksisters when they're warm as well but my dad loves them cooled down and I must say, they taste the best that way!
