Fluffy Flapjacks

Welcome back to another post! Today I want to share a recipe that I love to make in the mornings, and that's a fluffy flapjack/pancake recipe! These flapjacks are delicious and you can top them with any ingredient ~ salty or sweet. My favorite toppings are bacon with cheese or apricot jam! The recipe is also very easy to make + you can make a dry mix to store for the next time you want to make flapjacks! This recipe is by Spend with Pennies and not originally by me.
Fluffy Flapjacks
ingredients
mix:
- 4 cups flour
- 3 tbsp baking powder
- 2 tsp baking soda
- 1 tsp salt
- 3 tbsp sugar
batter:
- 1 cup mix (above)
- 1 egg
- 1 cup milk
- 1 tbsp oil
method
- Mix wet ingredients, then add dry ingredients and mix well.
- Throw batter in small circles, in greased pan. Cook them til they're golden brown on each side.
- Add any toppings you want and enjoy!
You're probably wondering what the mix is, right? Well, you can make that mix to store in a container for the next time you want to make the batter.
All you do is mix all the ingredients, put it in a tight container and store it! When you make the batter, use 1 cup of that mix as the dry ingredients for the batter!
These flapjacks are so good and fluffy and perfect for breakfast or even a dessert! You can also add anything on top, like, cream with berries, strawberry jam, bacon with honey, basically anything!
I suggest to use streaky bacon than bits of bacon so it's easier to take a bite of the flapjack. Also, you can make these flapjacks any size you want, but I like to make small ones since four of us eat out of this batter. If you make small ones, you'll be able to get 3 - 5 flapjacks for 4 people. We also like to make a huge one with leftover batter at the end!
