Gingerbread House recipe! blogmas post 10

Hey!

My mom and I have been wanting to make a gingerbread house since the start of the December holidays so today I am going to share the recipe we used + tips to help y'all! 
My mom and I found a template from another website since this recipe we made didn't have one - Gingerbread House template This template is from the website, Your Family! (www.yourfamily.co.za). It's the perfect size for a gingerbread house!
 
Gingerbread House!
 
ingredients
 
gingerbread
  • 4 cups flour
  • 1/2 tsp nutmeg
  • 5 ml cinnamon
  • 5 ml ginger
  • 5 ml baking powder
  • 5 ml baking soda
  • 1 cup butter
  • 1 cup brown sugar
  • 1 egg
  • 1/2 cup golden syrup
icing (glue)
  • 1 + 1/3 cup icing sugar
  • 1 egg white
  • 3 ml lemon juice

  • Cream butter and sugar till light.
  • Sift flour, ginger, cinnamon, nutmeg and baking powder. Then, mix the golden syrup, egg and baking soda together in another bowl. 
  • Now, add the syrup mixture to the butter and sugar and mix well (using a mixer). Mix in the dry ingredients with a spatula or wooden spoon till everything forms a soft dough.
  • Divide the dough into two even balls and wrap both of them with cling wrap. Press them evenly and put them in the freezer for about an hour.
  • Once they've chilled long enough, roll out both balls of dough, on a piece of wax paper, to about 4mm thick. Then bake the rolled out dough for about 20 - 25 minutes at 160°C or until it's a dark golden brown. 
  • Once it's done, it's time to cut out some pieces while it's warm. Let cool and take the pieces that you cut and place it on a tray. You may do whatever you want with the excess gingerbread.
  • Do the same with the other piece of dough. Once you're gingerbread pieces are cooled down, it's time to glue them together.

  • Mix all the ingredients for the icing together for 5 minutes. It should have a toothpaste consistency.
  • If it's too runny, add more icing sugar and if it's too stiff, add some lemon juice.
  • Put all the icing in a small bag and cut a small hole at one corner of the bag and you have a piping bag. 
  • All the icing sugar is enough to put the whole gingerbread house together. You may make a second batch of icing for decoration.
tips:
My mom and I changed some parts of the recipe to make it easier for us. For instance, the way you bake and cut the gingerbread. So, here's some tips to help y'all out!
- If you're gingerbread is too soft, put it back in the oven for about 10 - 15 minutes til it's a nice dark golden brown. This is how you'll know it'll cool down nice and crispy. 
- Don't cut out the gingerbread house pieces before you bake it. The paper will stick to the dough which will make marks on your gingerbread house.
- Your gingerbread pieces don't need to be perfect, it's okay if it's a bit skew. 
- Make sure your dough chills for a while because the dough will be sticky and a bit difficult to work with if it stands too long outside. This is why cutting it after it's baked is perfect!
- This recipe does have enough dough to cut out all the gingerbread house pieces, but try to fit as many pieces you can with both pieces of dough. 
- Also, work with one piece of dough at a time. And let the warm pieces cool on a flat surface, not a cooling rack.
 

 
My mom and I tried cutting the pieces before baking them, plus we tried taking the pieces individually and placing them on a baking tray but it was too soft to work with. With the second recipe (this recipe), we cut the outlines of the gingerbread house pieces and baked the whole piece of dough. Then we cut out the pieces and let them cool down. 
Our pieces were a bit thick and still a bit soft so we decided to wait overnight to see if they will harden a bit more, but they didn't. That's when we baked them again for a few minutes and they came out perfect!
After, we just glued it together with the icing, let it dry a bit and decorated it with a bunch of sweets and sprinkles! 
We decided to eat it the next day, so we kept the gingerbread house in our fridge overnight and it still stayed crispy! And it was delicious!
