Vanilla Sponge Cake! blogmas post 2
Hi!
I love cake, so today I want to share a vanilla sponge cake recipe that's absolutely delicious! It's perfect for any topping! We decided to make it a summer cake because in December it gets really hot where I live, so this cake is perfect for summer!
I converted the recipe to ml instead of grams in case the recipe looks a little weird, haha. If you have any questions on the measurements, comment down below and I'll be happy to answer them!
Vanilla Sponge Cake
ingredients:
- 1/2 cup butter
- 1/2 & 1/4 cup sugar
- 1 tsp vanilla extract
- 1/2 cup & 2 tbsp milk (warmed to 38°C)
- 2 eggs (room temp.)
- 2 tbsp oil
- 1, 1/2 & 1/4 cup flour
- 2 tsp baking powder
- pinch of salt
- Grease cake pan well. Preheat oven to 180°C (356°F).
- In a large mixing bowl, use a hand mixer to cream butter and sugar for 2 minutes, until creamy. Beat in vanilla extract.
- Use a fork to combine milk, eggs and oil in another bowl. Set aside. In another mixing bowl stir flour, baking powder and salt.
- Add 1/3 of the flour mixture to the butter mixture and mix until just combined. Add in half of the milk mixture and combine. Add in another 1/3 of the dry ingredients until combined and then add the rest of the milk mixture. Add in the remainder of the dry ingredients and mix with hand mixer until just combined, using a rubber spatula to scrape the sides and bottom to make sure everything is mixed in.
- Pour batter into cake pan and bake for 25 - 30 minutes. Let sit in pan for 5 minutes and then transfer to cooling rack to cool completely. Add toppings after cooled and enjoy!
Notes ~ Make sure the eggs are room temperature and milk is warmed to 38°C, you can use a thermometer to check. Also, mix all the ingredients as it says in the method and if you want to make two cakes don't divide the recipe in half, rather cut the cake, when it's finished, in half or bake a second one.
We baked one layer and cut it in half; we also used fresh whipped cream and some strawberries!
