Delicious Quesadilla Ideas
Hi everyone!
Today I want to share some delicious quesadilla ideas to make for dinner! Last night we decided to make them, and they turned out perfect. I'll also be sharing a guacamole and salsa recipe we like to make when we make quesadillas.
Mexican mince and bacon quesadilla
I also doubted if the bacon and Mexican flavors would go together but it was a delicious combo! So, if you're doubting, don't worry, it'll taste amazing.
ingredients
- onions + garlic
- mince
- bacon
- hot sauce
- barbecue spice (works best if it has a chili taste to it)
- barbecue sauce
- mixed herbs or any spice of your choice
- 2 roti wraps (store brought, or your own recipe)
- cheese
method
Turn your oven on at 180°C (356°F)
Put a cooking pot on the stove and turn the stove up to high heat. Cut an onion into slices, and add to pot with a good amount of oil. Add garlic when oil starts to sizzle.
Fry the onions with garlic and add your mixed herbs to bring out the most flavor.
Now add bacon and fry it (on high heat) till brown. Add mince after.
Now, stir mince till brown, and add all your spices including hot sauce and barbecue sauce. (We like to use a barbecue spice that has chili in for extra heat).
When mince and bacon are cooked, place one roti wrap on an oven pan and spread mince evenly on the wrap. Make sure the mince isn't too close to the edges of the wrap so it won't spill out in the oven.
Now grate cheese over mince, add another wrap on top of it to close the quesadilla, and bake for about 10 minutes, depending on how brown it looks or how you want it.
The mince may be a bit oily because of the bacon so try not to put too much mince on the wrap otherwise it may turn out soggy.
Barbecue-chicken quesadilla
ingredients
- chicken
- barbecue sauce
- cheese
- 2 roti wraps
method
You may use any type of chicken you'd like (chicken breasts, chicken wings, drumsticks, etc.). Cut the chicken into small pieces or pull them into small shreds, in a bowl.
Add a good amount of barbecue sauce for a delicious flavor. Grate cheese and mix it with the chicken (you may also add it on top of the chicken mixture, before baking, instead of adding it to the chicken) and put one of the wraps on an oven pan. Spread the chicken evenly and make sure they're not too close to the edges of the wrap otherwise it'll spill out in the oven.
Now add one of the wraps on top to close the quesadilla and bake in the oven for 10 minutes depending on how brown it looks or how you want it.
This was probably my favorite quesadilla out of the two because the chicken and barbecue tasted amazing together.
Guacamole
ingredients
- half an avocado
- lemon juice
- salt + pepper
- plain greek yogurt
method
Scoop out all avocado with a tablespoon and cut into small slices (this makes it easier to mash). In a bowl, mash the slices with a fork till it's nice and smooth.
Add a few drops of lemon juice and about 2-3 teaspoons of plain yogurt. Add enough salt and pepper and mix well.
The yogurt makes the guacamole super creamy and adds a bit of sourness to the mixture along with the lemon juice. Make sure there's enough salt in the guacamole to bring out the most flavor.
Salsa
ingredients
- tomatoes
- onions
- mixed herbs
- salt +pepper
- chilis (optional)
method
Cut tomatoes and onions in a Twista chopper so they're nice and small.
Mix them well and add your spices.
You may add some chillis as well, just cut them small and add them to the tomato and onion mixture.
One time we added chilis to the salsa but it was too hot for some family members (including me lol) so we decided to leave it. But chilis make it delicious, so add some and see if you like it!
These quesadillas were really good. You may add some greek yogurt on the side or some sour cream. My favorite is the chicken quesadilla! We brought the wraps but I do have a recipe for roti wraps if you guys would like to see it, comment down below!
