Lemon Cupcakes
Hi everyone!
Today I want to share a delicious recipe that my mom and I made for my brother a few weeks ago when he finished his last test of his whole school career. He said he wanted simple vanilla cupcakes with creamy frosting but we surprised him with lemon cupcakes instead to celebrate him finishing school and I want to share this awesome recipe with you!
We found this recipe from my favorite baker ever - I Am Baker! We followed the lemon cupcake recipe but we decided to make a lemon frosting instead of a strawberry frosting, so if you want the full recipe, here you go - Strawberry Lemon Cupcakes
We did change a few things about the recipe, like, the lemon juice that goes over the cupcakes once they're out of the oven and things like that. The link I have above has the full original recipe that I Am Baker made! <3

ingredients

1 1/2 cup flour
1 tsp baking powder
pinch of salt
1/2 cup butter (room temp.)
1 cup sugar
3 large eggs (room temp.)
1/2 cup milk (room temp.)
1 tsp vanilla extract
2 tbsp lemon juice
1 tbsp lemon zest
lemon frosting
1/2 cup butter (room temp.)
1 tsp vanilla extract
3 cups icing sugar
1 tbsp milk
1 - 2 tsp lemon juice
method

Preheat oven to 180°C (350°F) and prepare a 12 cupcake tin.
Sift flour, baking powder and salt and lightly whisk together. Set this bowl aside.
In another bowl, cream butter and sugar till light and fluffy. When creamed, add eggs, one at a time and mix well.
Add in vanilla extract, lemon juice and mix. Slowly add dry ingredients and mix until just combined.
Fold in the lemon zest with a spatula.
Divide batter evenly among 12 cupcake tins and bake for about 18 - 20 minutes or until toothpick comes out dry.
Let cupcakes cool completely after coming out of oven.
lemon frosting
Cream butter with icing sugar till it's light and fluffy.
Add vanilla extract, milk and lemon juice and mix well. You may add more lemon juice till it has the flavor you want.
Once the frosting is done, and cupcakes are cooled, you may finish cupcakes with an icing bag or any way you prefer. Decorate the way you want to and enjoy!
I love this recipe, the cupcakes are moist and soft and the frosting is super creamy. The combination is also delicious. They're also easy to make and taste amazing.
My mom and I changed a few things because we changed the flavor of the frosting and other than that we followed the rest of the recipe!
