The Best Malva Pudding

Malva pudding is a delicious dessert that originated in South Africa and is definitely a South African favorite. Its creamy sauce fits perfectly with the texture of the spongy cake and the sweet flavor tastes best with vanilla ice cream and custard.
My mom and I love to make this recipe on Sundays when we make a huge feast of vegetables and a leg of lamb, plus a delicious gravy. It's our go-to dessert to make when the men in our house are craving something sweet.
This recipe is delicious and easy to make, plus you probably have the ingredients in your pantry already!

My mom and I love to make this recipe on Sundays when we make a huge feast of vegetables and a leg of lamb, plus a delicious gravy. It's our go-to dessert to make when the men in our house are craving something sweet.
This recipe is delicious and easy to make, plus you probably have the ingredients in your pantry already!

ingredients
batter
4 tsp butter
1 cup sugar
2 eggs
2 1/2 tsp apricot jam
1 tsp baking soda
1/2 cup milk
1 tsp vinegar (white or brown)
1 cup flour (sifted)
pinch of salt
sauce
1 cup fresh cream (or milk, if you don't have cream)
1/2 cup sugar
1/2 cup butter
1/2 cup boiling water
1 tsp vanilla essence
method

Preheat the oven to 180°C (350°F) and grease an oven-proof baking dish.
In a bowl, cream butter and sugar with a hand mixer. Add the eggs one by one, mixing well after each addition.
Then, add the apricot jam and mix.
In another bowl, mix the baking soda, milk, and vinegar.
Mix the sifted flour and a pinch of salt in a separate bowl. Now mix the flour and milk mixture in turn to the butter and sugar mixture and mix well.
Pour batter into greased baking dish and bake for about 45 minutes or until toothpick comes out dry.
Once it's finished baking, take out the pudding and poke holes in it with a fork.

Mix all of the ingredients in a bowl and boil in the microwave (or in a small pot on the stove) till sauce makes bubbles.
As soon as the malva pudding comes out of the oven pour the hot sauce over the pudding and the sauce will soak into the pudding.
Serve warm and enjoy!

This recipe is from the Afrikaans recipe book Top 500 Wenresepte (Saamgestel deur Carmen Hiehaus) and I wanted to share it with you so you can try it for yourself. My mom and I did make a few changes to the recipe, though.
In the recipe book, it says to use caster sugar in the sauce but we used plain white sugar and instead of 3/4 cup of sugar we decided on 1/2 cup because the custard recipe we were making was also sweet.

I like to make the sauce about 10 minutes before the pudding is done baking since it must be hot when poured over the pudding. Make sure to time everything well so the sauce is hot when poured.
Vanilla ice cream fits best with the malva pudding and it's kind of a must to serve it with custard, lol.
