Delicious Tomato Pasta

Welcome back to this week's post! Today I want to share an original recipe that I love to make for lunch and it includes pasta which is a double win for me! I enjoy making this recipe and it's delicious! My mom came across a recipe that inspired this one and I've added and changed ingredients ever since and now, my mom always wants me to make it. Let's start!

my homemade tomato pasta 


serves two people

ingredients:
 
250g pasta (I prefer pasta screws or macaroni)
boiling water
4 large tomatoes
1 onion 
1 tsp crushed garlic (heaped tsp)
salt
black pepper

method:

Firstly, boil your pasta. In a microwave-safe bowl, mix pasta with salt. Add boiling water till it covers all the pasta and stir pasta with a spoon so it doesn't stick together. Microwave for 8:00 minutes (this should boil the pasta perfectly for a 950 watt microwave). 
Cut a cross on the top of each tomato and put them in a bowl. Pour boiling water over tomatoes till it's completely covered. Allow tomatoes to lie in boiling water for about 10 minutes. 
Rinse tomatoes with cool water and remove skin, it should slide off pretty easily. Dice tomatoes into small squares. 
Slice onions into thick slices. In a pan, fry onions with oil and mixed herbs for a few minutes on high heat. Add garlic and fry for a while longer. 
Add diced tomatoes and turn heat to medium. Add black pepper and more preferred spices, including salt. 
Add boiling water to tomatoes, enough to make a sauce consistency. Close pan with a lid and allow to simmer on low heat for a few minutes.
Strain cooked pasta and rinse with water to avoid pasta sticking to each other. Add pasta to tomato sauce in pan and mix well.
Divide pasta into two and enjoy!


notes:

You know when a tomato isn't quite as fresh but still edible? This is the perfect tomato for this recipe because the tomato is at the stage of keeping it in the fridge for longer will spoil it. If you have a lot of tomatoes whose quality decline over a short period of time, freeze them.
This will stop them from spoiling any further and you can always use them later on for a recipe that may require a lot of tomatoes. 
Add enough pepper and salt to the recipe, and don't forget the garlic! You may also add tomato sauce and/or tomato paste to elevate that flavor a little more. 
When adding the pasta, add small amounts and mix in between. Depending on your sauce, you may have more or less pasta so add just enough that allows the pasta and sauce to balance each other out perfectly. 
This recipe calls for enough salt too, so make sure to taste the sauce every now and then to make sure you have the right amount. 
I like to boil my pasta in the microwave because a stove is too slow for my impatience, lol, and a microwave is quicker. Make sure to add enough salt with this too. Maybe the recipe should be called, Delicious Salty Tomato Pasta. 

And that's pretty much it! I love this recipe and the flavors are just *chef's kiss*. The onions, tomatoes, garlic and black pepper makes a perfect combination and you can really add any pasta you want--spaghetti, pasta ridges, macaroni and any other type you may prefer over pasta screws!
