Chocolate Biscuit Fudge

Welcome back to this week's post! Today I want to share the recipe of one of my family's favorite treats - chocolate biscuit fudges! Otherwise known as smudges! They're incredibly chocolate-y, delicious and sweet, perfect for a treat after dinner.
My mom and I enjoy making this for the weekend, especially because of the amount this recipe produces! And, the recipe comes from one of my favorite Afrikaans recipe books: Mikrogolf Wenners 200 Beste Resepte by Annette Human. 
This recipe book contains countless recipes my mom and I have made for the family and many of them are our favorites, I definitely recommend this recipe book! Let's start the recipe!

chocolate biscuit fudge / smudges


ingredients

250g (1 cup + 2 tbsp) butter or margarine 
500g icing sugar
40g (7 tbsp) cocoa powder
2 eggs
2 packets (200g each) Marie- or Tennis biscuits

method

Microwave butter or margarine for about 1 1/2 minutes, in a deep microwave-safe bowl, until melted. 
Sieve the icing sugar and cocoa powder together and mix with the melted butter.
Beat the two eggs separately and mix into the cocoa mixture. 
Microwave this mixture for about 2 minutes. 
Break the 2 packets of biscuits into small pieces (not crumbs) and mix it into the cocoa mixture. 
Pour batter into a bowl of 26.5 cm x 26.5 cm and allow to chill in fridge for a few hours. Once chilled, cut the smudges into squares of your prefered size and enjoy!

We have a 950 watt microwave which allowed the recipe to work according to the method. The time it would take to melt the butter may vary based on how many watts your microwave is.
The recipe called for a smaller bowl to pour the batter in, with a size of 20 cm x 20 cm. If you use a bowl with these dimensions, you'll have taller and thicker squares. But, my family likes the smudges to be smaller so we used a larger dish. 
If you don't have icing sugar, you may use regular sugar too. But, when you microwave the cocoa mixture, microwave it for more than 2 minutes, until the sugar is completely melted. Or, before making the recipe, microwave the sugar for about 30 seconds to make it more refined. 
If you were wondering, the eggs in the recipe allow the mixture to set while it chills in the fridge so it's easier to cut once it's done. 
 
These smudges are delicious and incredibly sweet but perfect with a cup of coffee. It's also cool to see the layer the biscuits make and the combination of flavor it creates with the bitter cocoa!
