Trying Ina Paarman's Vanilla Cake

A few weeks ago my mom and I were doing our monthly grocery shopping and decided to buy Ina Paarman's Vanilla Cake mix and bake it.
OK, so, I'm a HUGE fan of Ina Paarman. If you look in our pantry and fridge, you'll find many Ina Paarman things, like, basil pesto, mixed herbs, and other spices, and last week you would've seen the vanilla cake mix.
Her products are amazing and I love cooking or baking with them because of the wonderful quality and taste!
Anyway, last week I had the week off from school and my mom and I decided it would be the perfect time to bake the cake for the weekend, so we did and I wanted to write a blog post about how good it is.
First of all, the cake's flavor. It's really spongy and soft and I loved the flavor of the cake. It reminds me of the vanilla cupcakes my mom and I love to bake.
She also has an icing kit but we decided to go with our icing recipe mostly because every time we went to the store we forgot to buy the icing kit.
I also loved how it rose. Our pan is sometimes too big so cakes would come out flatter than they should but even though our cake pan was bigger than most, the cake still raised perfectly.
Tip: If you have a springform cake pan and the cake batter runs out from the bottom, cut a piece of parchment/baking/wax paper, put it on the bottom part of the pan, then clip the sides of the pan to the bottom and cut off the excess parchment paper.
This really helps the cake stay intact and this way you won't waste any cake batter that runs out the bottom (trust me, it's not a fun experience lol).
We decided to go with a basic vanilla icing (3 cups of (sifted) icing sugar, 125g butter, vanilla extract, a dash of milk, and drops of lemon juice--to break the sweetness) and we put a tin of caramel in the middle. It was our first time adding caramel to a vanilla cake but I would totally recommend it because it was delicious.
Then, for the top, we went with a box of Astros. Also, we wanted to put the Astros around the cake in a neat way but...that didn't go according to plan, haha!
Overall, I would totally recommend buying the cake mix and trying it out for yourself. It was a delicious, spongy vanilla cake that was super easy to make and tasted amazing!
